Ingredients
1 1/2 lbs. pork tenderloin
garlic powder
1 lb. fresh green beans
1 1/2 lbs. red potatoes
1 cup low fat barbecue sauce
(We used Sticky Fingers Memphis Original.)
1 cup water
1. Cut pork into 2-inch cubes and spice with garlic powder to taste. Cut red potatoes into 1 1/2 inch cubes.
2. Spray large, non-stick pan with fat free cooking spray and brown pork over a medium heat.
3. Add water and barbecue sauce. Reduce heat to low. Cover and cook for one hour.
4. Add potatoes and cook for another 30 minutes or until potatoes break apart easily with a fork.
5. Add green beans and cook for an additional 5 minutes.
Yield: 4 Servings
Freeze individual portions for easy re-heating later.
