Ingredients
1 lb. turkey breast sliced into 1/2 inch strips
2 Tbsp. teriyaki sauce
(We used Kikkoman Teriyaki Marinade & Sauce because it was the lowest in sodium.)
2 1/2 cups whole-wheat pasta
(We used Healthy Harvest rotini.)
1/4 medium onion, diced
2 carrots cut into thin slices
2 cups broccoli florets
1 cup snow peas cut into thin strips
1 Tbsp. Lite Soy Sauce
(We used La Choy.)
2 Tbsp. water
1. Place turkey breast in a bowl with the teriyaki sauce, cover and marinate for 30 min.
2. Cook pasta according to package directions.
3. Spray a wok or large pan with non-fat cooking spray and place over a medium-high heat. Place turkey and marinade into pan and cook for 2-3 minutes or until the turkey is no longer pink. Remove the turkey from the pan.
4. Add onion, carrots and broccoli to the pan and cook for 2-3 minutes. Add snow peas and cook for an additional 1 minute, stirring continuously. Add turkey, soy sauce and water. Cook for an additional 1-3 minutes or until the turkey is hot, vegetables are slightly firm and the sauce is bubbling.
5. Serve over the pasta.
Yield: 4 Servings
Freeze individual portions for easy re-heating later.
