3/4 lb. ground turkey breast (98% Fat Free) 1 15-oz. can diced tomatoes
(Choose low-sodium to reduce the sodium in this recipe.)
1 8 oz. can no salt added tomato sauce
1/2 cup chopped onion
2 celery stalks, chopped
1 green bell pepper, seeded and chopped
1/2 cup frozen lima beans
1/2 cup frozen corn
1 jalapeno pepper, seeded and minced
1 Tbsp. chili powder
1 tsp. ground cumin
1 tsp. dried oregano
1/2 tsp. crushed red pepper flakes (or more to taste)
2 oz. baked tortilla chips
Top the chili with shredded fat free cheddar cheese.
1. Put the turkey in a large saucepan and add all ingredients but the tortilla chips.
2. Place the pan over medium heat and bring mixture to a simmer.
3. Cook 15 minutes or so until the turkey is cooked through, stirring occasionally.
4. Spoon the chili in bowls and serve the chips on the side.
Yield: 4 Servings
Freeze individual portions for easy re-heating later.
