Ingredients
1 1/2 cups chopped onion, divided
1 can (14.5 oz.) no salt added diced tomatoes
1/2 cup fat-free sour cream
Non-fat cooking spray
1 green chili chopped
1 tsp. ground cumin
1/2 tsp. ground cinnamon
2 garlic cloves, minced
3 Tbsp. chopped fresh cilantro
8 oz. yellow tail snapper fillet, skinned
2 Tbsp. lime juice
8 (6-inch) corn tortillas
2. Coat nonstick pan with non-fat cooking spray over medium heat. Add 1 cup onion, the remaining tomato (1 1/4 cup), green chili, cumin, cinnamon, and minced garlic. Cook for 5 minutes, stirring frequently. Mix in cilantro.
3. Arrange fish over onion mixture in pan then cover and cook 3 minutes. Turn fish over, cover and cook 2 more minutes.
4. Break fish into chunks. Stir in lime juice and cook 2 more minutes. Remove from heat.
5. Warm tortillas according to package directions. Fill each tortilla with 1/4 cup fish mixture and 1 heaping Tbsp. onion mixture.
6. Serve folded in half or rolled up.
Yield: 4 Servings of 2 Tacos Each
