Ingredients


3 slices SALT FREE multi-grain bread, diced
(We used Alvarado Street Bakery no salt Sprouted Multi-grain found in the organic foods section of the supermarket.)

1 cup chopped onion

1 cup (4 oz.) reduced fat Parmesan style grated topping
(We used Kraft brand.)

1/2 cup chopped fresh basil

1/3 cup sun-dried tomatoes diced

1/4 cup chopped fresh parsley

4 garlic cloves minced

2 1/2 lbs. 99% fat free ground turkey

4 large egg whites

fat-free butter flavored cooking spray

Sauce

1/2 cup sugar free blackberry jam

1/4 cup red wine

1 tsp. whole wheat flour


1. Preheat over to 400 degrees Fahrenheit.

2. Dice bread or chop into coarse crumbs with a food processor. In a mixing bowl combine bread crumbs and next 8 ingredients (onion through egg whites).

3. Lightly coat the 8 trays of a mini-loaf pan with the butter flavored cooking spray. Then divide the meatloaf mixture evenly between the 8 trays. Each mini meatloaf is composed of approximately 1 cup mixture.

4. Cover the pan with aluminum foil to keep the moisture in. Then bake at 400 degrees Fahrenheit for 50-55 minutes or until a meat thermometer inserted into one of the loaves registers 180 degrees Fahrenheit or more.

5. Pour all three SAUCE ingredients into a sauce pan and bring to a boil over medium-high heat. Cook for approximately 5 minutes until jam is melted. Then pour about 1 Tbsp. of the sauce over each of the 8 mini meatloaves, serve and enjoy.

Yield: 8 Servings - 1 Mini Loaf Per Serving
