Ingredients
1/4 cup hoisin sauce
1 Tbsp. ground ginger
1 Tbsp. rice vinegar
1 Tbsp. oriental sesame oil
1 lb. boneless, skinless chicken breast
1 medium (4 oz.) onion chopped
1 large (5.8 oz.) bell pepper cut into chunks
5 oz. of whole mushrooms, cut in half
(About 6 Mushrooms.)
1. Heat a grill to medium-high heat. Take the first four ingredients, hoisin sauce through sesame oil and whisk them together in a bowl. This is the marinade. Remove 1 tablespoon and set aside for a glaze.
2. Cut the chicken up into chunks, rinse and mix it in with the marinade. Let the chicken sit for about 15 minutes.
3. While the chicken is marinating, rinse and cut up the onion and bell pepper into bite sized chunks. Then cut the mushrooms in half. Put chicken on the skewers and mix in chunks of mushroom, bell pepper and onion. Divide everything evenly between 4 skewers.
4. Cook chicken for about 8 to 9 minutes on the grill. Take the tablespoon of glaze you set aside and brush some on the kebabs every couple of minutes. They're done when they're slightly charred.
