Ingredients
1 lb. boneless, skinless chicken, chopped
1/2 head of cauliflower (about 3 cups), chopped
1/2 head of broccoli (about 2.5 cups), chopped
1/2 cup onion, chopped
1 can (12 fl. oz.) diet orange soda
2 tsp. crushed red pepper
1 Tbsp. low sodium soy sauce
1. Preheat oven to 325 degrees Fahrenheit. Chop up the first 4 ingredients, chicken through onion and put them in a baking dish. (We used a 9 x 11 dish.)
2. Mix the orange soda, red pepper and soy sauce together in a bowl. Pour the orange soda mix over top of the chicken and vegetables.
3. Cover the dish with aluminum foil and bake for 40 minutes. Then take it out of the oven and stir everything up. Put it back in the oven uncovered and bake for another 20 minutes. Remove, stir and serve.
