1 lb. tilapia (white fish)

1/4 cup coconut flakes, sweetened

1/4 cup plain bread crumbs

1 large egg white

1. Preheat oven to 375 degrees Fahrenheit. Spray a baking sheet with fat free buttery spray.

2. Combine the bread crumbs and coconut together on a flat plate. Whisk the egg white on another flat plate.

3. Dip fish filet's in the egg white and cover both sides, then imediately dip both sides of fish in coconut mixture so it's thoroughly coated.

4. Put the coated fish on prepared baking sheet and cook for 20 to 25 minutes, depending on thickness of fish. Turn the fish over once halfway through cooking for a golden brown color on both sides. Serve with vegetables for a well balanced meal.
