Ingredients
8 chicken breast halves (about 4 lbs.), skinless & boneless
2 medium (2 cups) yellow onion, chopped
1/2 can (7.25 oz of a 14.5 oz. can) low-sodium fat free chicken broth
1/4 cup orange juice
2 Tbsp. honey, melted
2 Tbsp. chopped peanuts
2 Tbsp. low sodium soy sauce
1 Tbsp. dried onion flakes, minced
1 Tbsp. parsley, minced
1 clove (1 tsp.) garlic, minced
1 tsp. hot sauce
1/4 tsp. ginger, ground
1 Tbsp. cornstarch
1/4 cup peanut butter

2 cups carrots, chopped
1 cup water chestnuts, chopped
1. Prepare all the ingredients, then put the chicken and chopped onion in a 4-5 quart crock pot. Mix up all the remaining ingredients (except peanut butter) in a small bowl and pour that over the top. Then put drops of the peanut butter across everything and turn heat on HIGH. Set a timer and stir ingredients once every hour. After about 3 hours everything should be well cooked and tender.
2. Serve this with a side of brown rice and a vegetable for a complete meal.
Yield: 8 Servings
You can freeze individual portions for easy re-heating later.
Make sure to freeze them in freezer safe containers.
Microwave for approximately 4-6 minutes, keeping the container open just a little to allow steam to escape.
