Ingredients


1/4 cup red onion, finely chopped

4 plums (Canned or Bottled in Water), rinsed, pitted and chopped

1 clove (1 tsp.) garlic, minced

2 tsp. fresh thyme, chopped

1 tsp. dried rosemary

1/4 tsp. ground black pepper

1 tsp. olive oil

1 tsp. honey

1 Tbsp. balsamic vinegar

fat free olive oil spray

2 pork tenderloins, 8 to 10 oz. each


1. Combine the first nine ingredients, red onion through balsamic vinegar in a bowl. This is the plum salsa. Set aside and let it marinate while you prepare the pork chops.

2. Heat a non-stick pan over medium high heat. Once the pan is warm, coat with the fat free olive oil spray. Sear the pork chops for about 2 minutes per side. Then reduce heat to medium and cook for about 10 to 12 minutes, turning occasionally. To make sure pork is done, check with a meat thermometer and make sure it's at 150 degrees Fahrenheit.

3. Once the pork chops are ready, let them cool down for a couple minutes, then put the plum salsa on top and serve.
