Ingredients

2 large onions (4 cups), chopped

4 stalks celery (2 cups), chopped

1 lb. carrots, peeled and chopped

3 Tbsp. garlic, chopped

5 lbs. boneless, skinless, turkey breast, cut into thirds

2/3 cup white wine (or water)

1 can (14 oz.) fat free, reduced sodium chicken broth

1 tsp. NuSalt (Sodium Free Salt Alternative)

1 tsp. ground thyme

2 tsp. poultry seasoning

1/4 tsp. black pepper

1. Chop up the onions, celery, carrots and garlic. Mix them all together in a large bowl and then put half in the bottom of a 4-5 quart crock pot.

2. Place half the turkey on top of the first layer of vegetables. Spread the vegetables from your bowl into a second layer and put the remaining turkey on top of that.

3. In a mixing bowl, stir together the last six ingredients, wine (or water), broth, NuSalt, thyme, poultry seasoning and black pepper. Pour that over top the turkey and vegetables in the crock pot.

4. Put the lid on your crock pot and cook on low for 5-7 hours. It's finished when turkey is tender and meat thermometer reads 170 degrees fahrenheit.
