Ingredients
1 cup (approximately 1/2 a 12 oz. can) Coke Zero
1 cup barbecue sauce
(We used Kraft Light Original Barbecue Sauce. It's lower in salt and sugar.)
4 cloves garlic, minced
2 cups onion, chopped
1 green bell pepper, seeded and chopped
3 lbs. chicken breast, boneless, skinless
3 Tbsp. Cornstarch
8 whole wheat hamburger buns, sandwich thins or 16 slices of whole wheat bread
1. Put the first 5 ingredients, Coke Zero through green bell pepper, in a 4-5 quart crock pot and stir them together. Then set the chicken breasts in the mixture. Let the crock pot cook on low for 6 hours.
2. Take the chicken out of the crock pot and shred it. (We like using 2 forks. One to hold the chicken in place and the second fork to pull it apart or shred it.)
3. Whisk the cornstarch in with the barbecue sauce until it's thoroughly combined. Then stir the shredded chicken back in. Let cook for 1 more hour.
4. Serve the chicken over slices of bread.
Yield: 8 Servings
You can freeze individual portions for easy re-heating later.
Make sure to freeze them in freezer safe containers.
Microwave for approximately 2-4 minutes, keeping the container open just a little to allow steam to escape.
