Ingredients


1 package (0.2 oz.) dry yeast

1 cup warm water

1 tsp. sugar

1/4 tsp. salt

3/4 tsp. sodium free salt alternative
(We used No Salt Sodium Free Salt.)

1 Tbsp. canola oil

2 1/2 cups whole wheat flour


Alternative

1 tube (13.8 oz.) pizza dough, refrigerated
(We used the Pillsbury Pizza Crust Classic because it has the most dough per tube.)


1 pound ground turkey, 99% lean

1 cup onion, chopped fine

2 tsp. garlic, minced

3/4 tsp. cumin, ground

1 1/2 tsp. chili powder

1/2 cup red bell pepper, chopped fine

2 jalapeno chili peppers, chopped fine

3/4 cup salsa verde, fire roasted
(Choose mild to hot, depending on your prefrences for spicy.)

3/4 cup reduced fat mexican blend cheese, shredded

1 egg white, beaten


1. Make the dough yourself and you cut the sodium in half and double the fiber. Here's how: Dissolve the yeast in the warm water, about 1 minute. Then stir in the remaining dough ingredients, sugar through whole wheat flour. You may need to use your hands to knead the dough and make sure it's thoroughly combined. Cover the bowl with a wet towel and let stand while you prepare the stuffing.

ALTERNATIVE: If you don't want to make your own dough, simply use a roll of pizza dough, whole wheat if you can find it.

2. Preheat the oven to 425 degrees Fahrenheit and move the oven rack to the upper third of the oven. Prepare a baking sheet by spraying lightly with a fat free cooking spray.

3. Warm a large non-stick pan over medium high heat. Add the turkey, stir and cook for 5 minutes until it's crumbled. Add the onion and garlic and continue to cook until onions are translucent, about 5 more minutes.

4. Add the cumin, chili, bell pepper and chili peppers. Stir together and cook for about 2 minutes until thoroughly combined. Take the pan off the heat and stir in the salsa verde.

5. Divide the dough into 6 equal portions. Use a rolling pin to roll each portion out into a square about 8-10 inches across. If the dough sticks to the rolling pin, lightly dust it with flour.

6. Place 1/2 a heaping cup of turkey mixture in the middle of each dough square and top with 2 tablespoons of cheese. Brush the egg mixture along the border of the dough, fold over and pinch together to seal. Then brush the top of each calzone with the egg mixture.

7. Place the calzones on the baking sheet and bake for 10-12 minutes, or until top starts to turn a golden brown.
