Ingredients


2 (6 oz.) snapper fillets

1 1/2 tsp. olive oil

2 Tbsp. lime juice

2 Tbsp. rice wine vinegar

1 tsp. Dijon mustard

1 Tbsp. sugar free honey

1 tsp. ginger, ground

1/4 cup green onions, chopped

olive oil spray


1. Rinse the snapper, pat dry and set aside.

2. Combine all the ingredients (olive oil through ginger) EXCEPT the snapper and olive oil spray in a large mixing bowl. Then add the snapper and let marinade for approximately 5 minutes.

3. Heat a non-stick pan over medium heat. Put the snapper in the pan and cook for approximately 3 minutes on each side. Then add the remainder of the marinade, reduce heat to simmer and cook for another 2 to 4 minutes, or until the fish flakes easily with fork.

Yield: 2 Servings
