Ingredients
2 lbs. grouper fillets
3 cloves (3 tsp.) garlic, minced
1.5 naval oranges (about 4.9 oz. each), sliced
6 leaves of fresh basil, chopped
4 sprigs of thyme
1/4 tsp. salt
1/2 tsp. black pepper, ground
1. Preheat oven to 350 degrees Fahrenheit or fire up a grill. If the grill has a range setting, put it on medium.
2. Rinse the fillets and pat them dry. Put the fillets on a double sheet of aluminum foil and cover them with all the ingredients. Then wrap the fish up in the foil and make a tight seal, so all the juices stay inside.
3. Put the fish on the grill or in the oven, for 15 to 20 minutes. Grouper is done if it's all white when you separate it with a knife and fork.
4. Remove from the grill or oven, open up the package and divide into four portions. Serve it alongside some steamed vegetables and brown rice for a complete meal.
Yield: 4 Servings
You can freeze individual portions for easy re-heating later.
Microwave for approximately 2-3 minutes. Keep the container open a little to allow steam to escape.
