Ingredients
buttery cooking spray
1 package (5 oz.) stuffing mix
(We used Kraft Stove Top Lower Sodium Chicken Stuffing Mix.)
4 celery stalks (2 cups), chopped
1 large apple (1.5 cups), chopped
1 medium onion (1.5 cups), chopped
1/3 cup dried cranberries
1 cup fat free, lower sodium chicken broth
4 (6 oz. each) lean, boneless, top loin pork chops
The pork chops come out so tender you can cut them with a fork. This is a higher calorie meal, so if you're on a reduced calorie diet, simply cut the pork chops and serving size in half.
If you're cutting back on sugar, don't add the dried cranberries. You can remove 45 calories and 10 grams of sugar per serving.
1. Lightly coat 4-5 quart slow cooker with buttery spray.
2. Mix all the ingredients together, except the pork. Pour half the stuffing mix in the slow cooker, place pork chops on top and then cover with remaining stuffing mix.
3. Cover and cook on low for 4 to 5 hours, until pork is tender. Check at 3 hours and if it's dry, add a 1/2 cup of water if it is.
4. Divide the pork chops and stuffing into four or eight servings, depending on your calorie requirements.
Yield: 4 Servings
You can freeze individual portions for easy re-heating later.
Microwave for approximately 2-3 minutes. Keep the container open a little to allow steam to escape.
