Ingredients


2 cans (14.5 ounces each) no salt added diced tomatoes, undrained

2 cups water

1 1/2 cups uncooked brown rice

1 cup salsa
(We used Newman's Own Mild Salsa.)

1 cup onion, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

12-13 ounces vegetarian sausage, sliced
(We used Field Roast Vegetarian Grain Meat Sausages - Italian.)

1 can (4.5 ounces) green chilies, chopped

1 envelope (1 ounce package) reduced sodium taco seasoning
(We used McCormick Mild Taco Seasoning Mix with 30% Less Sodium.)


This recipe is higher in sodium. If you're on a low-sodium diet, you should consider another option.

This is an easy, slightly spicy and savory recipe that you can throw together in just a few minutes. Then package individual servings for easy re-heating later.

1. Put all the ingredients into a 3 or 4 quart slow cooker and mix. Cover and cook on low for 5-6 hours, until rice is tender.
