1 Tbsp. pesto
1 tsp. lemon juice
1 5-oz. salmon fillet

This recipe is much higher in fat than we usually present. However, when combined with a lowfat vegetable, the total fat for the meal balances out.
1. Preheat oven to 450 degrees Fahrenheit. Mix together the pesto and lemon juice.
2. Spread the pesto over the top and sides of the salmon. Place in a baking dish.
3. Bake, uncovered for 12-15 minutes, until the fish begins to flake easily.
Yield: 1 Serving
You can freeze individual portions for easy re-heating later.
Microwave on high for approximately 3-4 minutes. Keep the container open a little to allow steam to escape. We suggest you add some frozen vegetables to the dish so when you reheat it you have everything in a single dish.
