Ingredients
buttery cooking spray
2 cups onion, chopped
2 bags (12 to 13.7 oz. each) meatless ground
(We tested this recipe with both Morning Star Farms Veggie Grillers Crumbles and Gardein Beefless Ground and they were both good.)
1 can (15 oz.) reduced sodium tomato sauce
1 package (8 oz. or 2 cups) fat free cheddar cheese, shredded
1 Tbsp. ground mustard
1 Tbsp. reduced sodium worcestershire sauce
1 package (8 oz. or 2 cups) lowfat cheddar cheese, shredded
2 packages (14 oz. each) cauliflower veggie tots
1 cup grape tomatoes, halved
1/3 cup dill pickles, chopped
The original version of this had one-third more fat, half the fiber and less protein. By carefully choosing replacements, we figured out how to pack a tasty cheeseburger into a baking dish. Make it in advance and freeze individual servings for quick reheating later.
This recipe is higher in sodium. If you're on a low-sodium diet, you should consider another option.
1. Preheat oven to 400 degrees Fahrenheit. Lightly coat a 13x9 baking dish with buttery cooking spray and set aside.
2. Heat a large non-stick skillet over medium heat. Lightly coat pan with buttery cooking spray and cook the onions for 3 minutes, stirring occasionally.
3. Add the meatless ground to the pan, break it up and cook it with the onions for another 4 minutes.
4. Stir in the tomato sauce, fat-free cheese, ground mustard and Worcestershire sauce. Cook and stir together until cheese is melted, about 1-2 minutes.
5. Pour the mixture into the 13x9 baking dish. Sprinkle with 1 cup of the low-fat cheddar cheese.
6. Place the veggie tots over the top and sprinkle the remaining cup of low-fat cheddar cheese over the top.
7. Bake for 35-40 minutes, or until bubbly. Top with the tomatoes and dill pickles. Divide into 8 servings and eat or freeze.
Yield: 8 Servings
You can freeze individual portions for easy re-heating later.
Microwave on high for approximately 3 1/2 to 4 minutes. Keep the container open a little to allow steam to escape.
