buttery cooking spray

2 cups crispy rice cereal, crushed

1/4 cup (about 1.2 oz.) Parmesan cheese, grated

1 oz. package ranch seasoning mix
(We used Hidden Valley Ranch Seasoning Salad Dressing & Recipe Mix.)

4 skinless boneless chicken breasts (2 pounds total)

2 large egg whites, beaten

This takes chicken breast to a whole new level. Crispy outside and so tender inside. It's even good frozen with some vegetables and quickly reheated later for a quick lunch or dinner.
This recipe is high in sodium. If you're watching your sodium, you should choose another option.

1. Preheat oven to 375 degrees Fahrenheit. Lightly coat the baking sheet with buttery cooking spray and set it aside.

2. In a large bowl, mix the crushed rice cereal, Parmesan cheese and ranch seasoning.

3. Dip the chicken breasts in the egg whites, then the cereal mixture to coat evenly. Coat the chicken heavily. Put the chicken on the baking sheet and sprinkle what's left of the cereal mixture over the top.

4. Bake the chicken at 375 degrees Fahrenheit until golden, about 30 to 35 minutes. Serve with a side of vegetables.
