Ingredients


buttery cooking spray

1 1/4 pounds sweet potato, peeled and cut into chunks

1/2 cup plus 2 Tbsp. almond flour

1/4 cup whole wheat flour
(Or gluten free flour.)

1 large whole egg

1 large egg white

3/4 cup low sugar barbecue sauce, DIVIDED
(We used Sweet Baby Ray's No Sugar Added Sweet and Spicy Barbecue Sauce.)

1 pound boneless skinless chicken breast, cooked and diced

1/2 cup part-skim mozzarella, grated

1/2 cup fat free mozzarella, grated

1/2 cup red onion, thinly sliced

1/2 red bell pepper, chopped


Make this with gluten free flour and you get a sweet and tangy pizza that's surprisingly low in sugar.

This recipe is higher in sodium. If you're on a low-sodium diet you might want to consider another option.

1. Line a 12x10 or 9x13 inch baking sheet with aluminum foil. Lightly coat with buttery cooking spray and set aside.

2. Place the sweet potato chunks in a microwave-safe bowl with 1/4 cup water. Cover and cook on high for 5-7 minutes, until tender. Drain and transfer to a mixing bowl.
(You can also bring water to a boil, add sweet potatoes and cook for 8-10 minutes, until tender.)

3. Mash sweet potatoes until completely smooth. Set aside to cool.

4. Place chicken breast between two pieces of plastic wrap on top of a cutting board. Pound the chicken with the flat end of a meat mallet or frying pan. You want it all to be an even thickness, about 1/2 an inch.

5. Heat a non-stick frying pan over medium heat. Lightly coat pan with buttery cooking spray. Then cook chicken breast, 5-6 minutes per side until it's browned.

6. Dice chicken up and set aside.

7. Preheat oven to 400 degrees Fahrenheit.

8. Add almond flour, whole wheat flour, whole egg and egg white to mashed sweet potatoes. Stir to combine.

9. Spread the sweet potato mixture evenly out on the baking sheet. BAKE at 400 degrees for 25-30 minutes, until it's dry to the touch and starting to brown on the edges.

10. Spread HALF A CUP of the barbecue sauce evenly over the baked sweet potato crust.

11. Mix the REMAINING 1/4 cup barbecue sauce in with the diced chicken. Then spread the chicken evenly over the crust.

12. Mix the mozzarella cheeses together and sprinkle evenly over the chicken. Spread the onion and bell pepper over the top. Bake in the 400-degree oven for approximately 10 minutes until the cheese starts to bubble.

13. Cut into 8 squares and serve.

Yield: 8 Servings (Four if you like 2 slices each.)
