Ingredients
buttery cooking spray
12 oz. chicken breast cut into strips OR
8 oz. plant-based chicken
(We used Mindful Chik'n Strips Plant-Based Protein Vegan.)
1 cup onion, chopped
2 tsp. (2 cloves) garlic, minced
1/4 tsp. black pepper, ground
SAUCE
1/3 cup port wine
1/2 cup frozen cherries, halved
2 tsp. balsamic vinegar
1 tsp. fresh thyme
1 tsp. orange peel
1 tsp. honey
1/4 tsp. allspice
1/4 tsp. No Salt Sodium-Free Salt Alternative
Men's Health ran the original version of this recipe, but we wanted to see if we could use vegan Chik'N strips. We did, and it tastes great! The recipe is surprisingly easy to make, and it's a delicious protein for lunch or dinner.
WITH REAL CHICKEN
1. Heat a non-stick skillet over medium heat. Once the skillet is hot, lightly coat with buttery cooking spray.
2. Add chicken; saute for 2 minutes.
3. Stir in the onion, garlic and black pepper. Keep stirring occasionally until the chicken is browned and the onions are soft, about 5 more minutes.
WITH PLANT-BASED CHIK'N
1. Heat a non-stick skillet over medium heat. Once the skillet is hot, lightly coat with buttery cooking spray.
2. Add Chik'N, onion, garlic and black pepper. Keep stirring occasionally until the Chik'N is browned and the onions are soft, about 5-7 minutes.
SAUCE
1. Remove chicken or Chik'N from skillet; keep warm.
2. Keep skillet on medium, then add the remaining ingredients, wine, cherries, balsamic, thyme, orange peel, honey, allspice and No Salt.
3. Heat the sauce ingredients for about 3-5 minutes, stirring occasionally. Once it's all warm and bubbling, top the chicken or Chik'N with the sauce, divide into two servings and enjoy.
Yield: 2 Servings
