Ingredients


buttery cooking spray

12 oz. chicken breast cut into strips OR
8 oz. plant-based chicken
(We used Mindful Chik'n Strips Plant-Based Protein Vegan.)
Mindful Chik'N

1 cup onion, chopped

2 tsp. (2 cloves) garlic, minced

1/4 tsp. black pepper, ground


SAUCE

1/4 cup unsalted chicken stock

1/4 cup hard apple cider
(We used Angry Orchard Hard Cider Crisp Apple.)

2 Tbsp. almonds, sliced

2 Tbsp. dried cranberries

1 tsp. dried sage

1 tsp. Dijon mustard

1 Tbsp. sugar free syrup
(We used Cary's sugar free syrup.)

1/4 tsp. No Salt Salt Free Additive

1 tsp. cornstarch


Another revision of a Men's Health Chicken Recipe that we made with vegan chicken strips. Yummy!

WITH REAL CHICKEN

1. Heat a non-stick skillet over medium heat. Once the skillet is hot, lightly coat with buttery cooking spray.
2. Add chicken; saute for 2 minutes.
3. Stir in the onion, garlic and black pepper. Keep stirring occasionally until the chicken is browned and the onions are soft, about 5 more minutes. 

WITH PLANT-BASED CHIK'N

1. Heat a non-stick skillet over medium heat. Once the skillet is hot, lightly coat with buttery cooking spray.

2. Add Chik'N, onion, garlic and black pepper. Keep stirring occasionally until the Chik'N is browned and the onions are soft, about 5-7 minutes. 

SAUCE

1. Remove chicken or Chik'N from skillet; keep warm.

2. Reduce heat on the skillet to medium-low, then add the remaining ingredients, chicken stock, cider, almonds, cranberries, sage, mustard, sugar free syrup, No Salt and cornstarch.

3. Heat the sauce ingredients for about 3-5 minutes, stirring occasionally. Once it thickens it's ready. Top the chicken or Chik'N with the sauce, divide into two servings and enjoy.

Yield: 2 Servings
