Ingredients


2 cups mashed potatoes
(We used a carton of refrigerated traditional-style mashed potatoes from the supermarket.)

1/2 cup Parmesan cheese, grated

1/2 cup low fat Swiss cheese, shredded

1 shallot, finely chopped

1/2 tsp. dried rosemary, crushed
(Or 2 tsp. fresh rosemary, minced.)

1/4 tsp. dried sage leaves
(Or 1 tsp. fresh sage, minced.)

1/2 tsp. salt

1/4 tsp. black pepper

3 cups cooked turkey, finely chopped

1 large whole egg

2 Tbsp. water

1 1/4 cups panko bread crumbs

butter flavored cooking spray

OPTIONAL

sour cream


This is a great way to use up some of that leftover turkey when Thanksgiving is over. I like to make a couple of batches and freeze them for later.

1. combine the mashed potatoes, Parmesan, Swiss cheese, shallot, rosemary, sage, salt, and pepper in a large bowl—once combined, mix in the chopped turkey.

2. Shape into 12 patties, each one slightly less than half a cup.

3. Preheat the air fryer to 357 degrees Fahrenheit.

4. In a shallow bowl, whisk together the egg and water.

5. Place the bread crumbs in another shallow bowl.

6. Dip the croquettes in the egg mixture, then in the bread crumbs, patting them to help them stick.

7. Lightly coat the air fryer basket.

8. Place the croquettes in the air fryer basket in a single layer. Lightly spritz with the buttery cooking spray.

9. Cook until golden brown, 4-5 minutes.

10. Turn over, lightly spritz with buttery cooking spray again and cook for an additional 4-5 minutes until golden brown.

11. OPTIONAL: Add sour cream to the top.

Yield: 12 Servings (Of one croquette per serving.)

You can freeze individual croquettes for easy re-heating later.

Keep the container open a little to allow steam to escape. Microwave on high for approximately 1 minute, flip over and microwave for another 30 seconds to heat through.
