Ingredients
1 pound (16 oz.) chicken sausage
(We used Mild Italian Chicken Sausage.)
olive oil cooking spray
1/4 cup reduced-sodium soy sauce
1/3 cup reduced-sodium chicken broth
1 tsp. toasted sesame oil
1 Tbsp. grated ginger (or ginger paste)
3 cloves (3 tsp.) garlic, minced
1 (16 oz.) package coleslaw mix
1 Tbsp. lemon zest
1 Tbsp. fresh cilantro, chopped
1 Tbsp. sugar free honey
(We used Honey Tree's Sugar Free Imitation Honey.)

1 Tbsp. regular honey

This has all the tastiness of an egg roll but with half the fat removed. Enjoy it as a light lunch or as a side with another entree. Our tasting panel liked it best when served with hot mustard.
CAUTION: This recipe is high in sodium. If you're on a low-sodium diet, you might want to consider another option.
1. Prepare all the ingredients before you start.
2. Remove the skins from the chicken sausage, then cut the sausage into bite-sized pieces.
3. Heat a frying pan on medium heat and wait until it's hot. Then lightly coat with olive oil spray.
4. Cook and stir the sausage over medium heat until lightly browned, about 10 minutes.
5. Stir together the next 5 ingredients: soy sauce, broth, sesame oil, ginger, and garlic into the sausage.
6. Mix the coleslaw in with the sausage. Continue mixing and stirring until the coleslaw softens, about 8 minutes.
7. Stir in the lemon zest, cilantro and honey; then cook for another 2 minutes until the flavors combine.
8. Divide into 4 servings and enjoy. It will remain fresh in the refrigerator for 2 days if kept in a sealed container and reheated before serving. About 90 seconds in the microwave works well.
Yield: 4 Servings
You can freeze individual servings for easy re-heating later.
Keep the container open a little to allow steam to escape. Microwave on high for approximately 90 seconds, stir and microwave for another 30 seconds to heat through.
