1 1/2 pounds (24 oz.) of frozen Chik'n Nuggets
(We used Morning Star Farms Chik'N Nuggets.)

9 large egg whites

3 large whole eggs

1 1/3 cups fat free half & half

3 Tbsp. sugar free syrup
(We used Cary's Sugar Free Low Calorie Syrup.)

1/2 tsp. kosher salt

1/4 tsp. cayenne pepper (OPTIONAL)

This takes a classic Southern recipe and turns it into a convenient brunch casserole. It's also much lower in fat and sugar than the original, and the cayenne pepper gives it a nice little kick in each bite.

1. Preheat the oven to 350 degrees Fahrenheit.

2. Lightly grease a 9 x 13 inch baking dish with avocado oil spray.

3. Arrange the waffles on a baking sheet. When the oven is hot, bake the waffles for about 4 minutes per side until lightly toasted.

6. Cut the frozen Chick'n nuggets into quarters.

8. Whisk together the remaining six ingredients: half & half, egg whites, whole eggs, syrup, salt and cayenne pepper. Keep whisking until it turns a little frothy. We like using an immersion blender to speed things up and mix it well.

10. Put the covered dish in the oven and bake at 350 degrees Fahrenheit for 30 minutes. Then, remove the aluminum and bake for another 30 minutes, until the eggs are set and the top is golden brown. (Your total bake time is one hour.)

11. Let it stand for 5-10 minutes before cutting into 8 pieces and serving. Drizzle with syrup before eating.
