Ingredients
buttery cooking spray
4 chicken breasts (4 oz. each)
1 package (4 oz.) Herb Salad
(We chose Earthbound Farm Organic.)
8 walnuts, shelled and chopped
2 apples, cored and diced
2 Tbsp. crumbly gorgonzola cheese
1 package (5.6 oz.) raspberries
2 Tbsp. Fat Free Balsamic Vinaigrette
(We chose Maple Grove Farms of Vermont.)
1. Heat a non-stick pan over medium heat. Lightly spray with non-stick cooking spray. Cook the chicken breasts until browned, then cut them up into chunks.
2. Split herb salad between 4 bowls.
3. Mix 1/2 diced apple, 1/4 cup chopped walnuts, 1/2 Tbsp. gorgonzola cheese and 1/4 of the diced chicken in each bowl.
4. Sprinkle 1/4 of raspberries over each bowl.
5. Top each bowl with 1/2 Tbsp. of fat free balsamic vinaigrette.
Yield: 4 Servings
