Ingredients
4 cups peeled cucumbers cut in 1/2 inch chunks
4 cups firm tomatoes cut in 1/2 inch chunks
1 large red bell pepper cut in 1/2 inch chunks
3 Tbsp. fresh cilantro, chopped
3 Tbsp. fresh mint, chopped
1 medium carrot, chopped
1 cup mushrooms, sliced
2 cups raw cauliflower, chopped
2 scallions cut in 1/4 inch slices
Dressing
3 Tbsp. fresh lime OR lemon juice
1/4 tsp. freshly ground black pepper
4 Tbsp. Balsamic Vinegar
1/4 tsp. saffron
1/4 tsp. ground cumin
Topping
3 oz. reduced fat feta cheese, crumbled
1. Cut up the fresh vegetables first and place them in a large salad bowl. (That's the first 9 items, cucumbers through scallions.) As you finish chopping each item mix it in with the previous ones. Keep the bowl in a refrigerator between adding each item if you want it to stay chilled.
2. Mix together the 5 dressing ingredients, lemon juice through ground cumin. Use either a whisk to blend them together or a salad dressing jar you can shake them in vigorously. Pour the dressing over the vegetables and toss.
3. Crumble and spread the feta cheese over the top before serving.
