fat free butter spray

1 lb. boneless, skinless chicken breast

1 1/2 cups raw celery, diagonally sliced

1 cup snow peas, trim the edges and cut each in half

1/2 cup red bell pepper, seeded and diced

1/2 cup onion, diced

1 cup gala apples, cored and diced

1/4 cup red wine vinegar

1 Tbsp. canola oil

2 Tbsp. sugar

1 tsp. paprika

1 tsp. celery seed

1 cup chow mein noodles

1. Heat a non-stick pan over medium-high heat. Then spray with fat free butter spray and fry the chicken until it's nicely browned on both sides. Cut the cooked chicken up into bite sized chunks and put it into a mixing bowl.

2. Clean and prepare the next five ingredients, celery through apples, then put them in the bowl with the chicken.

3. In a small bowl, mix the vinegar, canola oil, sugar, paprika and celery seed. Mix together thoroughly and pour over the salad. Cover and put it in the refrigerator to marinate.

4. When it's chilled, mix in 1/4 cup of chow mein noodles with each serving and it's ready.

Yield: 4 Servings
