Ingredients
4 chicken breasts (1 lb.), skinless & boneless
1/2 cup celery, chopped (About 1.5 Medium Stalks.)
1/3 cup dried cherries
1/4 cup chopped pecans
1/3 cup chopped green onion
1/2 cup fat free mayonnaise
(We used Fat Free Miracle Whip.)
1/2 tsp. ground black pepper
Optional for Sandwich
16 slices of whole wheat bread
(Choose bread with at least 3 grams of fiber per slice.)
1. Chop up chicken into bite sized pieces. Then heat non-stick pan over medium heat and lightly coat with fat free olive oil spray. Cook the chicken, stirring occasionally until its lightly browned. Pour into a salad bowl.
2. Add the remaining ingredients, celery through mayonnaise and stir together until thoroughly mixed and coated. Cover the bowl and chill for 1 hour.
3. Serve either as a stand alone salad (2/3 cup per serving) or spread 1/3 cup onto toasted whole wheat bread for a sandwich. If you serve it as a stand alone salad it makes 4 servings. If you turn it into a sandwich it makes 8 servings.
Yield: 4 Servings (Salad) or 8 Servings (Sandwich)
