Ingredients


1 cucumber weighing approximately 10 ounces

1/4 Tbsp. red wine vinegar

1/2 tsp. chopped dill

extra virgin olive oil spray

No salt, Salt Free Alternative, to taste

black pepper, to taste


When you want something light but satisfying, this refreshing salad hits the spot.

1. Rinse off the cucumber, cut it into quarters, then slice it up, discarding the ends. Place the cucumber in a bowl.

2. Lightly spray the olive oil on the cucumber. Then pour the vinegar and dill on top. Cover the bowl and toss the cucumber so it gets coated evenly.

3. Sprinkle no salt and pepper, to taste over the salad.

Yield: 1 Serving
