Ingredients
2 cups chopped watermelon (seedless if available)
1 Tbsp. lime juice
1/2 tsp. grated lime zest
pinch of cayenne pepper
2 tsp. roasted pistachios, crushed
(We put them in a plastic bag and smashed them with a metal mixing spoon.)
1. Cut the watermelon into bite sized cubes. Put them in a mixing bowl, then sprinkle the remaining ingredients over the top. Cover and toss until thoroughly coated.
