2 cups chopped watermelon (seedless if available)

1 Tbsp. lime juice

1/2 tsp. grated lime zest

pinch of cayenne pepper

2 tsp. roasted pistachios, crushed
(We put them in a plastic bag and smashed them with a metal mixing spoon.)

This is an incredibly crisp "starter" for a special meal or picnic. The sweetness of watermelon mixed with the unexpected kick of cayenne pepper make it one of the most refreshing salads we've ever enjoyed.

1. Cut the watermelon into bite sized cubes. Put them in a mixing bowl, then sprinkle the remaining ingredients over the top. Cover and toss until thoroughly coated.

2. Spoon into individual dishes, about 1 cup per serving.
