Ingredients


1 package (12 oz.) veggie sausages
(We used Lightlife Smart Sausages Meatless Italian, found in the section where you get tofu.)

buttery cooking spray

4 cups green kale (5 oz.), chopped

1 cup onion, diced

1 red bell pepper, diced

2 or 3 Tbsp. red wine vinegar
(To taste.)


This is great served hot from the stove or after it's been chilled in the refrigerator for a couple hours. Be sure to cover it before you chill it. The fat is a little higher than we usually allow, but it's from the veggie sausage and it's a small amount, so it shouldn't be a problem.

1. Heat a non-stick pan over medium-high heat. Cut each vegetarian sausage lengthwise into four strips, then chop those into small pieces.

2. Lightly spray the pan with buttery spray, then cover and brown the links and onion for approximately 5 minutes, stirring about once every minute as needed. When finished, pour it into a bowl and set aside.

3. Add Kale to the pan and sauté for about 5 minutes.

4. Once kale is cooked, combine with the sausage and onion mix, then sprinkle red wine vinegar over the top. Toss everything together with the diced bell pepper and divide into four servings.

Yield: 4 Servings
