Ingredients


6 cups mixed salad greens, wash and dried

3 tsp. fresh thyme, diced

3 tsp. fresh mint, diced

pinch fresh cracked black pepper

1 can (15 oz.) beets, chopped

1 1/2 Tbsp balsamic vinegar

3 oz (4.5 Tbsp.) fat free feta cheese, crumbled


We threw together this recipe with canned beets and crumbled feta cheese for a simple and fast fancy salad.

1. Put two cups of lettuce in each of three bowls. Sprinkle a teaspoon of thyme and mint over each bowl along with a pinch of black pepper.

2. Divide the beets between the three bowls. Then drizzle 1/2 a tablespoon of balsamic vinegar and 1.5 tablespoons of fat free feta cheese over each bowl.

Yield: 3 Servings
