Ingredients
buttery cooking spray
1 14-ounce package veggie sausage
(We used Lightlife - Gimme Lean Meatless Veggie Sausage.)
4.5 cups broccoli florets (about 1 1/2 pounds)
2 cups seedless red grapes (about 1 pound)
2/3 cup celery, chopped
2 green onions, chopped
2/3 cup low fat mayonnaise
1/3 cup Splenda
1 Tbsp. apple cider vinegar
1/3 cup slivered almonds (Toasted if you want.)
1. Heat a non-stick pan over medium-high heat. Once it's hot, lightly coat it with buttery spray. Add the veggie sausage and chop it up. Continue using spatula to chop and stir veggie sausage for about 10 minutes, until browned. Put in a bowl, cover and store in the refrigerator.
2. In a large mixing bowl, combine the broccoli, grapes, celery and onions.
3. In a small bowl, mix together the mayonnaise, Splenda and vinegar. Then pour over the broccoli mixture and toss everything to coat. Cover and refrigerate for at least 4 hours, or overnight.
4. When ready to serve, gently stir in the veggie sausage and almonds.
