Ingredients
1 serving (3 ounces) sweet potato fries, baked
(We used Publix brand frozen Sweet Potato Fries.)
buttery cooking spray
1/2 cup onions, sliced and quartered
1/4 cup cucumbers, chopped
2 cups baby spinach
1/2 cup romaine lettuce, shredded
1/2 cup grape tomatoes, sliced in half
2 Tbsp. carrots, shredded
1/4 cup (2 oz.) fat free cheddar cheese

The salad dressing of your choice.
A salad with French fries? Whoever originally thought of it is a genius. We swapped out the fried for baked and regular potatoes for sweet potatoes. You'll love the result.
1. Bake the sweet potato fries according to package instructions.
2. While the fries are baking, heat a non-stick pan over medium-high heat. Once it's hot, lightly coat with buttery cooking spray. Then cook the onions for 5-7 minutes, until browned and they start to turn translucent.
3. Toss the remaining ingredients together with the cooked onion. Then place sweet potato fries over the top.
4. Put a couple tablespoons of your favorite salad dressing over everything, serve and enjoy.
