Ingredients
1.5 cups cucumber (7 oz.), skin removed and chopped
1 cup tomato (6.3 oz.), chopped
1/2 cup (4 oz.) fat free Greek yogurt
1 tsp. apple cider vinegar
1/4 tsp. salt
1/4 tsp. black pepper, ground
1 tsp. Splenda or stevia
OPTIONAL
1 tsp. fresh dill
This is a light and refreshing salad that goes with almost everything. Make it in advance and keep it in the refrigerator up to three days for a chilled delight anytime.
1. Prepare the cucumber and tomato, put them in a bowl and set aside.
2. Mix together the yogurt and vinegar in a bowl. Stir in the salt, pepper and Splenda or stevia.
3. Pour the yogurt mixture over top the cucumber and tomato, then stir everything together. Your salad is ready.
