Ingredients
2 cans (6 oz. each) solid white albacore tuna in water, drained and flaked
1 cup celery, chopped
1/4 cup sweet onion, chopped
1/3 cup reduced fat mayonnaise
2 Tbsp. fresh parsley, minced
1 Tbsp. lemon juice
1.5 tsp. fresh tarragon, minced (or 1/2 tsp. dried tarragon)
1 tsp. Dijon mustard
1/4 tsp. white pepper
8 oz. (about 8 cups) mixed salad greens and spinach
A tasty salad that'll make a perfect light lunch.
1. In a small mixing bowl combine the tuna, celery and onion.
2. In another small bowl mix the mayonnaise, parsley, lemon juice, tarragon, mustard and pepper. Stir it into the tuna mixture.
3. Place about 2 ounces (2 cups) of mixed greens on each plate, (4 plates total). Then drop about 2/3 of a cup of the tuna mixture over each plate and serve.
