3 cups chopped cabbage
1 medium unpeeled red apple, cored and finely chopped
1 medium unpeeled granny smith apple, cored and finely chopped
2/3 cup carrot, peeled and grated
1 red bell pepper, chopped
3 green onions (scallions), white parts finely chopped
1/3 cup low-fat mayonnaise
1/4 cup Splenda Brown Sugar Blend
1 Tbsp. lemon juice, or to taste
This is a sweet combo of fruit and veggies.
1. Pour all the ingredients into a large mixing bowl, then stir to combine. Cover the bowl and store it in the refrigerator.
2. I like to leave it sit and marinate for a couple of hours before I serve. It's delicious overnight too.
