Ingredients
2 large apples (about 20 oz. total), chopped into small pieces
(We used Cosmic Crisp or Pink Lady Apples for the best taste.)
2 large cucumbers (about 20 oz. total), peeled and chopped into small pieces
1/2 a serrano pepper, seeds removed and minced into small pieces
4 Tbsp. lime juice (About the juice from 2 whole limes.)
Surprisingly sweet with just a tiny bite at the end. Wonderful for enjoying during a hot summer. Alex Mutammara posted the original recipe and we love it.
1. Start by removing the apple cores and chopping the rest into small pieces. We used a fruit and vegetable chopper like the one shown below to get them small enough and uniform. Put them in a bowl.


2. Remove the skin from the cucumbers and chop them into small pieces, the same size as the apples. Put them in the bowl with the apples.

3. Cut a serrano pepper in half, remove the seeds, and mince them into small pieces. Then, put that in with the apples and cucumbers.


3. Squeeze the juice from two limes over the salad. A good ratio is one lime per large apple.
4. Mix everything together and serve. Covering or storing it in an airtight container will keep it fresh for two days. The lime juice helps prevent the apples from turning brown.

Yield: 6 Servings, About 1 1/4 Cups Per Serving
