Ingredients


12 slices of Roast Beef (3 ounces per serving, 12 ounces total)
(We used Sara Lee brand.)

8 slices of sourdough or salt free bread

Fat-free cooking spray

2 small onions (approximately 2 cups) sliced thin

2 tsp. minced garlic cloves (approximately 2 cloves)

4 Tbsp. honey mustard

8 slices reduced fat swiss cheese - .75 oz. per slice
(We used Sargento Deli Style Reduced Fat swiss.)


If you are looking to reduce sodium, we suggest you substitute SALT FREE multi-grain bread for the Sourdough bread. (We used Alvarado Street Bakery NO SALT Sprouted Multi-grain found in the organic foods section of the supermarket.)

1. Heat up non-stick cooking pan and cook beef approximately 1 to 2 minutes per side, until just slightly browned. Put aside.

2. Begin toasting bread.

3. Cook the onions and garlic in a small non-stick cooking pan with fat-free spray until onions just start to turn brown. Then set them aside.

4. Spread 1 Tbsp. honey mustard per slice on 4 slices of toasted bread. On the remaining four pieces of bread place 2 slices of cheese, 3 slices of roast beef and 1/2 cup cooked onions per slice. Top with the honey mustard coated bread.

5. Put each sandwich in the microwave for approximately 1 minute on high (or until the cheese is melted). Serve.

6. NOTE: If you are making this recipe for freezing, skip step 4 and put the sandwiches directly into freezer containers. The cheese will melt when you re-heat them later.

Beef Patty Melt

Freeze individual portions for easy re-heating later.

Re-heat each serving for approximately 3-5 minutes in the microwave. Make sure to crack open the top of the container before you start to let hot air escape.

Upon re-heating it might be a little sloppy, consider eating it with a knife and fork.
