Ingredients

Two 7.5 oz. cans of pink salmon (no salt added)

4 Tbsp. green onions chopped

2 tsp. hot sauce

8 Tbsp. Classique Fare Belgian Waffle Mix

3 egg whites

4 Tbsp. tartar sauce

2 oz. baby spinach

8 slices SALT FREE multi-grain bread.
(We used Alvarado Street Bakery no salt Sprouted Multi-grain found in the organic foods section of the supermarket.)

Non-fat butter cooking spray

Please Note: If you have the Salmon Burger Plain the percentage of fat in the meal is much higher than without the bread. This is because Salmon is a fish that is higher in fat. If you eat the Salmon Burger Plain we suggest you accompany it with brown rice and/or vegetables.

1. Mix together in a bowl the first five ingredients (salmon, green onions, hot sauce, waffle mix and egg whites).

2. Heat a non-stick cooking pan over medium heat and spray with fat-free spray. Take 1/2 cup of salmon mixture and place in pan. Cook until each side is brown (Approximately 2-4 minutes per side.)

3. While salmon burgers are cooking start toasting bread. Once toast is ready put cooked salmon burger on it and add 1 Tbsp. of tartar sauce to the top of each patty.

4. Cover salmon patties with baby spinach to taste and serve with another slice of bread on the top.

(If you're making the salmon burgers plain skip the toast and baby spinach step.)

Salmon Burger

Freeze individual portions for easy re-heating later.

Re-heat each serving for approximately 2.5 - 3 minutes in the microwave. Make sure to crack open the top of the container before you start to let hot air escape.

While the burger is re-heating you can toast the bread and have a meal ready in under 5 minutes.
