Ingredients
1 cup chopped onion
3 cups chopped mushrooms (about 8 oz.)
1/2 chopped green pepper (about 1/2 cup)
1/3 cup chopped baby carrots
1/4 cup chopped celery
2 garlic cloves (2 tsp.), minced
2 lbs. 93% lean ground beef
2 cans (8 oz. each) no salt added tomato sauce
1 can (6 oz.) no salt added tomato paste
1 Tbsp. Worcestershire sauce
2 tsp. dried oregano
1/2 tsp. pepper
1/2 tsp. salt (Optional)
Tabasco / Hot Sauce to taste (Optional)
1/4 cup sugar free syrup
(We used Cary's Sugar Free Syrup.)
3 tsp chili powder
8 hamburger rolls
(Whole wheat is better but this is calculated with white rolls.)
Fat-free cooking spray
2. Place a non-stick cooking pot on medium heat and coat with fat-free cooking spray. Pour the bowl of vegetables into the pot and saute for 5 minutes. Add the lean ground beef, stirring occasionally until meat is browned (approximately 7 minutes).
(If you want to make this recipe more lean, brown the lean ground beef in a separate pan at the same time you're cooking the vegetables. Once meat is browned, pour into a strainer and rinse with hot water. Shake water off and pour meat back into the pan with vegetables.)
3. Stir in the remaining ingredients from the tomato sauce to the chili powder. Bring the sauce to a boil, cover, reduce heat and simmer for 20 minutes. Stir occasionally.
4. Toast the hamburger burns. Each sandwich is made with 1 cup of sloppy joe mix. Serve along with a side of baby carrots instead of chips.
5. For an extra kick, mix in some tabasco or hot sauce. Just remember that will increase the sodium!
Yield: 8 Servings - Serving Size 1 Cup of Sauce per Sandwich
Freeze individual portions for easy re-heating later.
Re-heat each serving for approximately 5-6 minutes in the microwave on high.
Make sure to crack open the top of the container before you start to let hot air escape.
