Ingredients


1/2 medium cucumber without the skin

4 Tbsp. fat free cream cheese

2 Tbsp. fat free mayonnaise
(We used fat free Miracle Whip.)

1/4 tsp. Tabasco sauce

4 slices bacon

4 slices low sodium bread
(We used Alvarado Street No-Salt! Sprouted Multi-Grain Bread.)

fat free buttery spray
(We used Olivio Buttery spray.)

1 cup baby spinach


1. Remove the skin from the cucumber and then dice it. In a bowl mix together the cream cheese, mayonnaise and Tabasco. Fold the cucumber into the mix. This is the spread.

2. Heat a non-stick pan and cook 4 slices of bacon per the package instructions. When finished cooking, set the bacon aside on a paper towel to drain.

3. Toast the bread. Spray with fat free buttery spray. Put half of the spread on one slice and half on another. Now put 2 slices of bacon on top of each half.

4. Split the baby spinach and put half on each sandwich. Top with the remaining bread. Cut in half and serve.

Yield: 2 Servings
