Ingredients


1/2 lb. ground turkey (99% fat free)

1/2 cup oatmeal
(We used Quaker Oats.)

1 carrot (2.5 oz.) - diced

1 medium onion (3.9 oz.) - diced

1 celery stalk (2.2 oz.) - diced

2 cloves garlic - minced

1/2 tsp. cumin

2 Tbsp. chili powder

1/4 cup chopped parsley

1 Tbsp. ketchup

1 Tbsp. mustard

4 egg whites

1 cup red kidney beans
(We used Bush's Best Light Red Kidney Beans because it had the lowest sodium.)

1/2 cup diced tomatoes
(We used Del Monte No Salt Added Diced Tomatos.)

1/2 tsp. pepper

1/4 tsp. garlic powder

4 portabella mushrooms

2 slices reduced fat swiss cheese


1. Preheat the oven to 350 degrees Fahrenheit. Spray a cookie sheet with fat-free cooking spray.

2. Mix all the ingredients in a bowl except the last two, portabella mushrooms and swiss cheese. Shape the mixture into 4 patties and place on your prepared cookie sheet. Bake for 20 minutes.

3. While the patties are baking, rinse the portabella mushrooms and cut off the stems. Cut each slice of swiss cheese in half, putting one half on top of each mushroom.

4. Remove patties from the oven and place one burger on top of each portabella mushroom. Return to the oven and bake for 10 more minutes. Take from the oven and serve.
