Ingredients


4 Tbsp. fresh lime juice, divided

1 large onion (5.3 oz.) cut in half and thinly sliced

4 tsp. (4 cloves) garlic, minced

1 1/2 tsp. dried chili powder

2 lbs. top round beef

fat free olive oil spray

4 8-inch whole wheat tortillas (soft tacos)

1 cup shredded cilantro

1 whole medium tomato (about 4.5 oz.), chopped

Optional

4 Tbsp. fat free sour cream

4 Tbsp. guacamole


1. Mix 3 Tbsp. of the lime juice, the onion, garlic cloves and chili powder together in a small bowl. Then put the steak into a 13x9 baking dish. Pour the lime mixture over the top to coat the steak. Cover and refrigerate while it marinates for 30 to 45 minutes.

2. Once the meat is done marinating, warm a large non-stick frying pan over medium-high heat. Then spray the pan with fat-free olive oil spray. Cook steak until it's brown on each side, then put it on a board and cut into 1 inch thick strips.

3. Pour remaining tablespoon of lime juice over the steak, then divide into 4 servings and put each one on a whole wheat tortilla. You can warm the tortillas in a microwave for a minute if you'd like. Top with cilantro and chopped tomato.

4. Add a tablespoon of fat free sour cream or guacamole for a little extra flavor.
