Ingredients
1 lb. chicken breast, boneless, skinless
olive oil spray
4 medium hard rolls, whole grain
2 cups romaine lettuce, finely shredded
1/3 cup fat-free Caesar salad dressing
6 Tbsp. shredded Parmesan cheese
1. Set the oven to broil. Put the chicken breasts on a broiler pan and spray each one with olive oil spray.
2. Broil the chicken for 4-5 minutes on one side. Then flip them and let them cook another 4-5 minutes. While the chicken is browning, cut the rolls in half.
3. Once chicken is browned, remove from the oven and cut into cubes. Put the shredded Romaine lettuce in a bowl and toss with the Caesar salad dressing, Parmesan cheese and chicken cubes. Divide the chicken Caesar salad between the 4 buns and serve.
4. This can also be served cold. Simply cover the chicken Caesar salad and chill.
