Ingredients


fat free cooking spray

1.5 lbs. boneless, skinless chicken breast

3 Tbsp. dried cranberries

3 Tbsp. toasted pine nuts

1 cup apple (1 medium apple), cored and chopped

1/4 cup fat free mayonnaise

1/4 cup fat free sour cream

1 Tbsp. mustard

1 Tbsp. sugar free honey
(We Used Honey Tree Sugar Free Imitation Honey)

1 tsp. ground curry

2 cups fresh spinach, shredded

12 slices whole wheat bread


1. Heat a non-stick pan over medium heat. Once the pan is hot, lightly coat with fat free spray. Cook chicken for approximately 10 to 15 minutes, turning occasionally until it's browned. Use a meat thermometer and make sure the internal temperature of the chicken is at least 170 degrees. Cut and shred the chicken into small pieces.

2. Put the chicken in a large bowl and mix in the cranberries, pine nuts and chopped apple.

3. In a separate bowl whisk together the mayonnaise, sour cream, mustard, honey and curry. Pour the mixture over the chicken and toss until thoroughly coated.

4. Stir in the chopped spinach. Toast the bread and spread approximately 3/4 cup over each sandwich.

Yield: 6 Servings
