Ingredients


1/2 cup frozen corn

1 cup tomatoes, diced

1/2 cup onion, chopped

1/2 cup black beans, drained and rinsed

1 jalapeno, chopped (remove seeds and ribes to lower the heat)

1 tsp. cumin seeds

1/2 tsp. chili powder

1 lime (about 2.4 oz.), zested and juiced

2 Tbsp. cilantro, chopped

4 white turkey hot dogs
(We used Ball Park Smoked White Turkey Franks.)

4 whole wheat hot dog buns
(We used Nature's Own 100% Whole Wheat Hot Dog Rolls.)

buttery cooking spray

1/4 cup reduced fat sharp cheddar cheese, shredded


This is a great recipe to make in bulk for parties. Mix up the salsa the day before and serve it over grilled hot dogs or turkey burgers.

1. Mix together the first nine ingredients, corn through cilantro in a bowl, cover and refrigerate until needed.

2. Cook the hot dogs on a grill until browned. If you're doing this indoors, preheat oven to 400 degrees Fahrenheit. Put the hot dogs on a baking sheet and cook in the oven. 8 minutes on one side, then rotate and cook another 8 minutes until brown.

3. About 3 minutes before the hot dogs are done, place hot dog buns on a baking sheet, lightly spray with buttery cooking spray, then put in the oven for 3 minutes.

4. Put the hot dogs in the buns, cover with 1/4 cup of salsa and sprinkle 2 Tbsp. cheese over the top.

Yield: 4 Servings
