Ingredients


2 cups water, or more as needed

1 1/2 cups uncooked green lentils

1 can (15 oz.) no salt added tomato sauce

1 can (15 oz.) fire-roasted diced tomatoes

1 1/4 cups carrots, diced

1 medium bell pepper, diced

2 cups onion, diced

4 cloves (4 tsp.) garlic, minced

1 1/2 Tbsp. chili powder

2 tsp. vegan worcestershire sauce

2 tsp. rice vinegar

1 tsp. cumin, ground

1 tsp. yellow mustard

1 tsp. liquid smoke flavoring

1/2 tsp. onion powder

1/2 tsp. smoked paprika

1/4 tsp. cayenne pepper, ground

1/4 tsp. salt

1/4 tsp. black pepper, ground

7 whole wheat hamburger buns
(We used Dave's Killer Bread 21 Whole Grains and Seeds Burger Buns.)


This recipe was forwarded to us from AllRecipes.com. It's an amazing tasting plant version of the classic sloppy joe. Don't tell anyone it's vegan, just let them enjoy it.

1. Combine all the ingredients, except the hamburger buns in a slow cooker. Stir to combine.

2. Cover and cook on high for 3 hours. Open and stir, then cover and cook on high for 1 hour more.

3. Toast hamburger buns and put 1 cup of sloppy joe mix on each bun. We served them open face with 1/2 a cup on each side. Serve immediately.

4. You can put individual servings in freezer safe containers for reheating later.

Yield: 7 Servings, 1 cup of mix per serving


Sloppy Joes with Lentils 

This is a Freezer Friendly Recipe!

Freeze individual servings of the spread in freezer safe container. When you want to reheat, put it in the microwave and thaw on high for 3 to 4 minutes.

Spread on toasted buns and serve.
